This cheesy cauliflower bake is the ultimate keto comfort food. Creamy, cheesy, and satisfying — it’s perfect as a side dish or even the main event!

Ingredients

  • 1 large head cauliflower, cut into florets
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp cream cheese
  • 2 cloves garlic, minced
  • 1 tbsp butter
  • Salt and pepper, to taste
  • Fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a medium-sized baking dish.
  2. Steam or boil cauliflower florets until just fork-tender (about 5–7 minutes). Drain well.
  3. In a saucepan, melt butter and sauté garlic until fragrant (1 minute).
  4. Stir in heavy cream and cream cheese. Simmer until smooth and slightly thickened.
  5. Add half the cheddar and mozzarella; stir until melted.
  6. Combine cauliflower with the cheese sauce and transfer to the baking dish.
  7. Top with remaining shredded cheese and bake 20–25 minutes, until golden and bubbly.
  8. Garnish with parsley, serve warm, and enjoy!
