Cheesy Cauliflower Bake
This cheesy cauliflower bake is the ultimate keto comfort food. Creamy, cheesy, and satisfying — it’s perfect as a side dish or even the main event!
Ingredients
- 1 large head cauliflower, cut into florets
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 2 tbsp cream cheese
- 2 cloves garlic, minced
- 1 tbsp butter
- Salt and pepper, to taste
- Fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C). Grease a medium-sized baking dish.
- Steam or boil cauliflower florets until just fork-tender (about 5–7 minutes). Drain well.
- In a saucepan, melt butter and sauté garlic until fragrant (1 minute).
- Stir in heavy cream and cream cheese. Simmer until smooth and slightly thickened.
- Add half the cheddar and mozzarella; stir until melted.
- Combine cauliflower with the cheese sauce and transfer to the baking dish.
- Top with remaining shredded cheese and bake 20–25 minutes, until golden and bubbly.
- Garnish with parsley, serve warm, and enjoy!
